Regular bakers need a strong sourdough culture behind their operation. They also require a stable and simple ingredient, which is easy to maintain and won’t take up time and thought in the bakery.
A sourdough starter gets stronger over the years, as the microflora learn to survive changes in environment. Ours has been going strong for over 30 years now, and is backed by long experience. Feeding is far less frequent than with other starters, as the starter itself is thick and very stable. It is a powerful culture and works at as little as 1% of the dough weight being produced.
A feeding schedule is included, as well as a link to a troubleshooting page and some general bakery relevant info. This starter is stronger than most liquid starters. We recommend keeping the starter in its dough consistency for stability and ease of use. However, it can be converted to a liquid by adding one third of its volume of water if you prefer.
To calculate the size you need for your bakery, here’s a guide:
Small = 1kg.
Medium = 2kg
Large = 3kg.
Your weekly useage should be about half the total amount supplied. If using pre fermentation, our starter is approximately ten to twenty times stronger than liquid starter. If using straight up, it is about two to four times stronger than liquid starter. You don’t need a large amount. If you need help to work out how much to purchase, our number is below.

Our Live Sourdough Starter is over 30 years old. It was originally cultured from scratch by the SourdoughBaker himself, Warwick Quinton. During that time, this starter has leavened millions of loaves of bread. It has been the sourdough backbone to all of Warwick's bakeries, as well as the backbone of many other bakeries (home and professional) that Warwick has collaborated with over the years.
The starter is in the DESEM style, meaning that it is thick, like a dough. For transport reasons, the Desem has been rolled into a sheet and may require a feed before use. Full instructions are with the package.
It comes with online specific information on how to feed and maintain the starter. Support is available for the lifetime of the starter.
