Give an experience to a colleague or loved one which they will never forget. The Full Day workshop is a one-on-one day of real world micro production sourdough fun in a micro bakery, using the same types of tools that were around in bakeries 100 years ago.
For the Full Day Baking Workshop, the recipient can choose between either a day of doughmaking (Dough Day), or a day of shaping, proofing and baking (Bake Day). Or, do both, and stay overnight at one of Gloucester's many accommodation choices. Typically, each day is about 6 hours long.
Dough Day
A day of creating dough using a traditional dough trough. The dough trough is a tool used for centuries around the world to enable the baker to make bulk quantities of dough quickly and without too much effort.
We'll be using our home made French style dough trough to create two base doughs, which will then be turned into a variety of other breads for our micro bakery subscribers pre order each fortnight.
This workshop includes a free toastie for lunch as well as a chunk of Papa, our three decade sourdough starter. As the day unfolds, you will learn the sourdough process we use, which can be translated easily to the home baker.
Dough Days a held to coincide with our fortnightly subscriber bake and are on Wednesdays.
Bake Day
We will experience a whole day of pre shaping, shaping, finishing and proofing bulk sourdough as master baker Warwick Quinton prepares to bake his weekly subscriber bake. They will be making up to 6 different kinds of sourdough, and will be using the oven and baking off up to 80 loaves on the day.
In addition, students will get to take home a freshly baked loaf, and a portion of Warwick’s 3 decade old sourdough starter, Papa, as a living momento of the day.
Bake days are held every Thursday fortnight, and the certificate can be swapped or used as credit for other workshops and services provided by the School of Sourdough.

Full Day Workshops are a brilliant gift for your family member (or yourself) who wants to become immersed in a day of a micro bakery based sourdough bread production. The bakery is largely off grid and is structured around teaching how to make hand made dough using a dough trough and a baking it using a woodfired oven. Either choice entails lots of dough, seeing and experiencing first hand many of the ‘tricks of the trade’ from a small production run, and learning the baking process in bite sized chunks.
